INGREDIENTS

8 turkey pieces

4 pieces of fresh sweet corn on the cob (cut into 8 chunks)

6 spring onions

1 scotch bonnet pepper (adjust to taste)

2 bell peppers (1 red, 1 green)

2 tbsp dry basil

1 onion

1 small piece of ginger

4 cloves of garlic

3 tbsp pepper soup spice mix (or DIY: 2 tbsp curry powder, 2 tbsp thyme, 1 tbsp turmeric, 1 tbsp rosemary, and 2 tbsp ground black pepper)

1 tbsp vegetable oil

Chicken seasoning (to taste)

Salt (to taste)

1.5 liters of water

STEPS

Prepare the Turkey:

Place the cleaned turkey pieces in a large pot.

Blend the Aromatics:

Blend the bell peppers, scotch bonnet pepper, ginger, garlic, onion, and the white parts of the spring onion into a smooth paste.

Season the Turkey:

Add the blended mixture to the pot with the turkey. Season with salt, chicken seasoning, and pepper soup spice mix (or your homemade mix). Stir well, cover, and cook on medium heat for 10 minutes to allow the turkey to absorb the flavors.

Add Water and Sweet Corn:

Add 1 tablespoon of vegetable oil and pour in 1.5 liters of water. Add the sweet corn chunks and stir well. Cover the pot and simmer for another 15 minutes, or until the turkey is tender and the corn is cooked through.

Add Final Ingredients:

Chop the remaining green part of the spring onions (or use mint leaves for a refreshing twist) and add them to the pot. Sprinkle in the dry basil, stir gently, cover, and let it cook for another 10 minutes.

Serve and Enjoy!

Your delicious Nigerian Pepper Soup is ready to serve!
